Tonight I made the following from Maangchi: pajeonpotato side dishfried tofuveggie riceIt was pretty great. I've also had a crack at no knead bread and Hello Dolly slice, which was awesome. I think the next project will be vegan brinner with mushroom bacon to use up the rest of the king oyster mushies I got for the veggie rice. ooh, let me know how the mushroom bacon goes! my mom makes kick ass eggplant bacon but i bet mushroom bacon is even better. :3 I really liked it! You just oven bake the mushies and they get crispy on the outside and chewy in the middle. It's got more texture than eggplant or tofu or tempeh bacon. My absolute favourite DIY facon is rice paper though, it's chewy and crispy and easy as heck.

I've never tried challah and a bunch of people were making it in a FB group I'm in, so I made some this afternoon. It's so good. Me and my husband have already eaten half of it.

Challa is hands down I think my favorite bread. Try making french toast with it! So good. It's been ages since I've had any. I've also been into Maangchi recipes lately. Though basically just making this one so far for a veggie pancake. I should look around her site and see what else grabs my interest.

Try making french toast with it! I tried and it came out... ok. I used a pan but I think it would've come out better on the panini press/grill thing we have.

Yesterday the kid and I made cake pops for the first time. It was an experience to say the least. My sisters came over to help dip and decorate. We did independence day theme of course and they came out really good and tasty.

I'm not a big yogurt person, being lactose intolerant and everything, but I recently tried the Oui yogurt (primarily because they come in little glass pots that I wanted to use for plants) and it's actually v good and doesn't bother my stomach. The vanilla is okay, and I like tossing in some sprinkles into it. The honey is not my fave but THE MAPLE. The maple is amazing and I am so sad that it's probably seasonal and will go away soon.

So I've been in a bit of a lull (mood, ambition, energy, you name it) since my kid left for the summer. I've cooked maybe 2 actual meals besides egg sandwiches and microwave meals. I just put a pork roast in the crockpot to make BBQ pulled pork for dinner and meals this week. Planning to make some pudding cookies this weekend as well. I miss cooking but it's hard to justify making decent meals-that result in lots of leftovers when it's just me in the house right now.
