I used clear nail polish because they had already sat in a bag for a few days and I was willing to risk it- they're fine. They look a little weird, greyish, but otherwise perfect when I looked about 6 months ago.
A lot of people use resins, which would probably have been better had I not been traveling.

i *want* to say that punching & tapering would make healing a wee bit suckier, but loads of people punch & taper with no problem. mostly i hear ppl say they opted to taper up a size to minimize bleeding, but if you aren't prone to excessive bleeding i would say it's a non-issue. mine were just punched, and lots of ppl do that too. i couldn't really say which is more common, honestly.
sleeping on your side is gonna suuuuck with them healing, so if you can sleep on your back do it.
and as far as whether to do both at once or one side at a time... i usually recommend doing one side at a time so you have a side to sleep on. but it does make lining them up a lil harder, and extends the time you spend healing. if you really wanna knock em both out at once, and you think you can deal with the possibility of not sleeping on your side for a hot minute, go for it. neck pillow is a good idea.

Hah, my piercer asked if I want to eat my cutlets, which made me a little shocked - I had not heard of that being a thing and didn't really understand and just stared at him for a while, then probably sounded offended or something when saying "not really". I went to a rock gig the same evening and was a little nervous if the smoke machines would leave some nasty particles in, but I think there was nothing to worry.
I got mine done at 4g 4 years ago. It was an easy mod for me, but my left one has been some what cranky at times. I also did hit it few times when it was healing, at it developed little mount of scar tissue that I've had to treat with testosterone ointment. They were just punched without tapering.
I admit that having got them done at the same time was bad sleeping in mind, but I'm happy that it gave me possibility to compare their healing phases. Also, the other was really easy to punch after I was in an adrenaline rush after the first. I also wondered if I have had chickened out, been too lazy to go to get the other one, or if I would have been way too nervous while waiting for the second appointment if I took them separately. They also healed for sooo many months, so better this way.
And yeah, glass is solid choice. Delrin or PTFE are also fine, but colorfronts are just nice. Just clean it well so you won't get "wet ear". After it has healed, there is variety of stone and all. I'd advice against healing with titanium unless the plug is smaller than 8g, too heavy pieces and they would be expensive.
Also, not apart from any other piercing - eat well while healing.

PTFE degrades and goes brown and nasty and is not suitable for healing piercings. Titanium is very light even in large sizes, and is great for healing.

Ok, sorry for my wrong information about the PTFE. I had a recollection of that being a good for initials. Oops.
I prefer titanium for many things, but personally hadn't seen it good for conches, not at least anything double flared, because the flares often tend to be too bulky for fresh, sore cartilage. Single flared titanium plugs would of course do, but good quality titanium can cost (and also often is not something that can be found straight from the shelf). And if one ends up to invest in some pretty titanium pieces, it would be wise to do with the specs of healed measurements. Those longer 3/4" glass conch plugs are really good for healing, and cheap.

Y'know, if you take this "belief of his that you shouldn't throw out a part of your body" to its logical conclusion...does that mean that if he needs to have his gallbladder removed, he would like the surgeon to present it to him on a silver platter afterwards with a knife and fork? Or if he has the misfortune of needing an amputation, one of his limbs?

My ear bits were just disposed of. I saw them on the tray, and that was plenty lol. If they've been larger than 6g, maybe I would've kept them? I think if I could do it over again, I'd see about going larger....

I don't know for sure if he would've absolutely refused to do my punches if I didn't eat the bits, but it came off that way. I agree that it seems a little grody, but he's a great artist with a wonderful reputation, I swear! I personally wouldn't have had any issue with just throwing my ear bits in the trash or feeding them to the dog or something, but I'm also a creep and didn't have any problem with eating them. ¯\_(ツ)_/¯

I am a terrible finger skin biter, so eating the flesh from punches shouldn't be that different but for some reason the idea makes me feel icky.

I don't know what happened to my earbits after I didn't want to do anything with them. Probably they were thrown into trash. Or he ate them. Or he took them home and used them in some weird sexual occultist acts. I can never know, mmh. Wtf gave me this idea.

The skin wouldn't bother me, it's the cartilage I don't like the idea of. My conch punch was only at 8g, piercer asked if I wanted to see the bit that was punched out (I did), then it was disposed of.

Question - if I'm indecisive about what size to get punched at, is it better to err on the side of larger or smaller? Is it better to stretch up or downsize in the future?

Go larger, for sure. Stretching cartilage is no fun. And conches are only so big - it's not like you risk having to downsize from 1" to 8g or something.
